Tajin Zahra / Roasted cauliflower with tahini sauce

 

This dish is the perfect side dish or mezze, for any dinner table. the strong taste of roasted cauliflower and the creaminess of the tahini sauce make it the great balance you need in any dish.

Ingredients: 

- 500g cauliflower, white or colorful

- 1 medium onion (3/4 cup half moon)

- cooking oil spray 

For tahini sauce:

- 1/2 cup tahini 

- 1 cup yogurt 

- 1/4 cup water

- 3 mashed garlic cloves 

- 5-6 tablespoons lemon juice 

- 1 teaspoon salt (or to taste)

Directions:

- Wash and dry the cauliflower. Cut the cauliflower to 2cm (1”) pieces. Place the cauliflower and onion on a baking sheet lined with parchment paper, and spray with cooking oil.

- Cut the onion half moon. Place the onion on a baking sheet lined with parchment paper, and spray with cooking oil. -

- Roast in a preheated oven on 350f for 30 minutes, or to reach preferred crunchiness.

- In a small bowl combine all the tahini sauce ingredients, mix until well incorporated

- Transfer the roasted cauliflower to a baking tray, top it with the roasted onion. Add the tahini mixture on top.

- Bake it again for 10 minutes.

- Garnish it with green onion, parsley, fresh mint or toasted almonds.
