Syrian Ghee Cookies / Ghraibeh / غريبة

Traditional delicate cookies, original to the city of Damascus.

It’s easy with 3 ingredients. Yet it’s truly hard to master it.

First tip, never replace ghee with butter in this recipe. Sine butter contain water, and that will change the texture and taste of the cookies. While ghee contains no water, and leave the cookies crumbly and soft.

 

Ingredients:

- 1 cup melted ghee

- 1 cup powdered sugar

- 2 cups flour

- 150g (5oz) pistachio

Directions:

- In a deep bowl, mix the melted ghee and powdered sugar by hand, or a hand mixer on medium speed.

- Start adding flour gradually, by 4 batches, and mix after each one.

- When ingredients are well mixed together, start forming a cohesive dough using your hands.

- let the dough rest in the fridge for one hour.

- Divide dough into small ball (size of table tennis balls). And shaping the into short rope, then connect the ends to get a mini doughnut shape. At the attached ends, add one pistachio and press gently by hand m.

- bake in the preheated oven at 350 degree for 10-12 mins.

- the top part should be white with no color after finishing baking.

- don’t over cook.
