Zucchini Fries & Walnut Dip

 

Ingredients:

- 500g (1lb) any green zucchini

- 4 tablespoons olive oil

- 1 teaspoon sumac

- 1/2 teaspoon garlic powder

- 1/2 teaspoon Aleppo pepper

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1/2 -1 teaspoon salt, or to taste

- fresh thyme leaves, washed and dried

- 1/4 cup pecorino or any hard cheese, grated

- zest of one lemon

For the walnut dip:

- 3 garlic cloves, mashed

- 1 teaspoon salt

- 1/2 cup raw walnuts, chopped

- 3 tablespoons fresh thyme, chopped

- 1/4 cup olive oil

- 5 tablespoons lemon juice

Directions:

- Slice off the bottom and top parts of the zucchini, about 1/2 inch off. Cut and slice the zucchini vertically, about 1/2-inch thick. It’s important that you keep the thickness consistent so every single fry will be perfectly baked. Arrange the zucchini nicely and slice them into strips just like fries, about 3-inch lengths.

- In a big bowl mix all the seasoning ingredients well, place then add the zucchini, mix till each piece coated with the seasoning.

- On an oven sheet lined with parchment paper, arrange the fries in single rows.

- Bake in a preheated oven at 400 F, for 15-20 minutes. Put on broil for the last 3 minutes. (Every oven varies)

- To make the dip, in a small bowl, mix the mashed garlic, walnuts, fresh thyme, olive oil, lemon juice, and salt.
