Vegan Green Beans Stew

 

Ingredients:

- 900g (2lb) green beans, washed, stems off and cut to 3cm pieces

- 3/4 cup onion, finely diced

- 5 garlic cloves, finely diced

- 1 cup fresh tomato, peeled and diced with the juice(or 1 can)

- 1/4 cup olive oil

- 1 teaspoon ground coriander

- 1 teaspoon 7 spices

- 1 tablespoon salt, or to taste

Directions:

- In a big pot, add the olive oil and diced onions. Sauté for few minutes, add the garlic, coriander, 7 spices, and salt. Sauté for few minutes. Don’t let it get brown.

- Add the green beans, mix, add 3 tablespoons water, cover and let it cook for about 30 minutes on low-medium heat.

- Add the tomatoes, mix and cover. Let it cook for about 20 minutes.

- Uncover, let it cook for more 10 minutes to dry all the liquid.

Tips:

Best enjoyed cold with extra drizzle of olive oil, and pepper, white onion, fresh mint or other herbs, radishes. Best eaten with Arabic bread, forming the bread like little pouches to hold the stew.
