Chocolate Olive Oil Cake

 

Ingredients:

- 2 eggs

- Lemon zest of 1 lemon

- 1 teaspoon vanilla extract

- 1 teaspoon salt

- 1/2 cup whole plain yoghurt

- 1/2 cup maple syrup

- 1/4 cup date molasses

- 1/4 cup olive oil

- 1 1/2 cup all-purpose flour

- 1/2 cup cocoa powder

- 1 teaspoon baking powder

- 1 teaspoon baking soda

- 1 teaspoon ground cinnamon

- 1/2 teaspoon ground nutmeg

- 1/2 teaspoon ground clove

For the chocolate ganache:

- 1/2 cup chocolate chips (dark or milk chocolate)

- 1/4 cup heavy cream or whole milk

To garnish:

- edible rose petals (optional)

Directions:

- Preheat the oven at 350 F.

- In a big mixing bowl, add 2 eggs, lemon zest, salt, and vanilla extract. Using a hand mix, mix on high speed for 2 minutes.

- Add the liquids, maple syrup, olive oil, date syrup, and yogurt. Mix on medium speed for 1 minutes, or till we’ll combined.

- Add the sifted dry ingredients, flour, cocoa, baking soda, baking powder, and spices. Mix by hand till all ingredients well combined.

- Pour the batter into loaf pan lined with parchment paper, bake in the oven for 35-40 minutes. Depending on your oven temperature

- To make the ganache, place chocolate chips in a bowl and bring heavy cream to a boil in a small saucepan. As soon as the cream reaches a boil, pour it over the chocolate and stir until smooth and shiny.

- Garnish with rose petals.
